Chipotle Chicken
Ingredients
Marinade
- 1 tsp cumin
- 5 garlic cloves
- 1 tsp dried oregano
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp chili powder
- 1 small onion
- 1 tablespoon olive oil
- 1 (7 oz) can chipotle peppers in adobo sauce
- 1/3 cup chicken broth
- 1 Lemon or one lime – ¼ cup lime juive
Chicken
- 2 lbs chicken breast
Instructions
- Add all the marinade ingredients to a blender.
- Blend until completely smooth.
- Place the chicken breasts in a large bowl or zip-top bag.
- Pour the marinade over the chicken, making sure all pieces are well coated.
- Cover and marinate overnight in the refrigerator for the best flavor.
- When ready to cook, remove the chicken from the marinade.
Cooking Options
Grill
- Preheat the grill to medium-high heat.
- Grill the chicken for about 6–8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
Pan Fry
- Heat a skillet over medium heat with a drizzle of oil.
- Cook the chicken for about 6–7 minutes per side, depending on thickness, until fully cooked.
Serve with rice, tortillas, salads, or roasted vegetables.
