Chipotle Chicken

Ingredients

Marinade

  • 1 tsp cumin
  • 5 garlic cloves
  • 1 tsp dried oregano
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • 1 small onion
  • 1 tablespoon olive oil
  • 1 (7 oz) can chipotle peppers in adobo sauce
  • 1/3 cup chicken broth
  • 1 Lemon or one lime – ¼ cup lime juive

Chicken

  • 2 lbs chicken breast

Instructions

  1. Add all the marinade ingredients to a blender.
  2. Blend until completely smooth.
  3. Place the chicken breasts in a large bowl or zip-top bag.
  4. Pour the marinade over the chicken, making sure all pieces are well coated.
  5. Cover and marinate overnight in the refrigerator for the best flavor.
  6. When ready to cook, remove the chicken from the marinade.

Cooking Options

Grill

  1. Preheat the grill to medium-high heat.
  2. Grill the chicken for about 6–8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).

Pan Fry

  1. Heat a skillet over medium heat with a drizzle of oil.
  2. Cook the chicken for about 6–7 minutes per side, depending on thickness, until fully cooked.

Serve with rice, tortillas, salads, or roasted vegetables.
