Sourdough Bagels
Ingredients
- 450g bread flour
- 225g water
- 100g active sourdough starter
- 20g honey
- 10g salt
- Sesame seeds or bagel toppings
Instructions
Mix the Dough
- Combine water, salt, sourdough starter, and honey.
- Mix thoroughly.
- Add flour and knead for 8–10 minutes by hand or mixer.
First Rise
- Place dough in a covered bowl.
- Let rise 4–6 hours, or until doubled.
Shape
- Divide into 6–8 equal pieces.
- Shape into balls and poke a large hole in the center.
Proof
- Place on a floured baking sheet.
- Cover and rise 2–3 hours until doubled.
- Optional: refrigerate overnight for better flavor.
Boil & Top
- Bring sweetened water (with honey or sugar) to a boil.
- Boil bagels 1 minute per side.
- Add toppings while still damp.
Bake
Bake at 410–420°F for 20–25 minutes until golden brown.
