Sourdough Bagels

Ingredients

  • 450g bread flour
  • 225g water
  • 100g active sourdough starter
  • 20g honey
  • 10g salt
  • Sesame seeds or bagel toppings

Instructions

Mix the Dough

  1. Combine water, salt, sourdough starter, and honey.
  2. Mix thoroughly.
  3. Add flour and knead for 8–10 minutes by hand or mixer.

First Rise

  1. Place dough in a covered bowl.
  2. Let rise 4–6 hours, or until doubled.

Shape

  1. Divide into 6–8 equal pieces.
  2. Shape into balls and poke a large hole in the center.

Proof

  1. Place on a floured baking sheet.
  2. Cover and rise 2–3 hours until doubled.
  3. Optional: refrigerate overnight for better flavor.

Boil & Top

  1. Bring sweetened water (with honey or sugar) to a boil.
  2. Boil bagels 1 minute per side.
  3. Add toppings while still damp.

Bake

Bake at 410–420°F for 20–25 minutes until golden brown.
